Balsamic Vinegar
Our selection boasts two types of balsamic vinegar and a dressing: the balsamic vinegar of Modena IGP, the Traditional Balsamic vinegar of Modena PDO and the dressing. Our vinegars make use of an important added value: the certified chain process of the certified vineyard soils, able to produce the raw material that will then be transformed and aged to obtain a finished product of great quality. IGP vinegar is produced from a mixture of cooked must and wine vinegar, derived from selected grapes and guaranteed by the regulations of the consortium, which is then left to rest in wooden barrels for a minimum of 60 days up to 3 years. The traditional balsamic vinegar of Modena is produced by fermentation and aging of must only, as required by the specification. It is aged in cherry barrels (which gives softness to the flavor), chestnut and oak (to give character), resting for a minimum of 12 years for the “Affinato” and of 25 years for the “Extravecchio”. Balsamic dressing is produced exclusively with cooked must, a small percentage of wine vinegar and aged in oak barrels. The final product is particularly dense and full-bodied.
