Fiocco is the leanest cut of the pork leg and it is a small sized cut (the biggest part is used to make the fine culatello). We selected for you Gianferrari farm because of many reasons: they don’t use any kind of preservative or chemical additive, they calibrate the right balance of fat and lean part in each cut, they age it up one year in the peculiar climate of Canossa hill, where it is made.
