Fiocco
Fiocco is the leanest cut of the pork leg and it is a small sized cut (the biggest part is used to make the fine culatello). We selected for you Rossi farm because of many reasons: they calibrate the right balance of fat and lean part in each cut, the total ABSENCE ofgluten ,milk derivates and chemical flavourings.
