Culatello di Zibello PDO
We offer three different Culatello: Culatello di Zibello PDO, Traditional Culatello and Culaccia (Culatello with pork rind).
We opted for a small factory called la Bastia in Pieveottoville di Zibello (Parma) to supply our PDO Culatello di Zibello, because the maker takes care of each step of the process, starting from the selection of the meat to his processing and ageing. We created a trustful long term relationship with him to guarantee the best product quality and service. Traditional Culatello does not have the PDO Zibello certification only because it is produced and aged out of the specific geographical area. Traditional Culatello is anyway a very high quality product from the “Rossi” factory, who choose only Italian pork meat worked and aged just outside the Parma area.
Last, we offer Culaccia made by “Rossi” factory, a unique product with a registered trademark. It comes from the highest quality Italian meat, does not contain preservatives, gluten, milk, eggs or derivatives thereof.
