Parmigiano Reggiano Aged over 30 months

Extra-aged Parmigiano Reggiano is an increasingly digestible cheese. This factor is so important that studies have found that the version which has been matured for 36 months is suitable for children who suffer from lactose allergies, to help ensure they meet their daily calcium requirement. For a sublime taste experience, why not try a morsel of Parmigiano Reggiano aged for 30-36 months, with a few drops of Traditional Balsamic Vinegar of Modena or served with chutneys, pickles, or preserves made with green tomatoes, pears, figs, or pumpkin. Another pairing to try out is with our own Confettura Extra di Visciole sour cherry preserve.
