The four months of maturation in basement-ventilated cellars makes this cold cut a real delicacy. Rigorously salted by hand, our coppa is massaged while adding laurel, rosmary, clove, in order to flavor all the cracks and small cuts of the meat.
The coppa becomes soft, flavored and lightly sweet, that makes it unique.
