Made out of the poorest part of the pork, after a first cleaning it is minced, hand mixed and eventually bagged in the skin of the paw.

Our Zampone goes then to a first cook in water and then, after being vacuum-sealed, vapor-cooked, that permit a longer preservation and a quicker final cook (20 minutes are enough).

It is produced with homemade methods by Regnani’s delicatessen.
