Tortellini are a kind of filled Emilian pasta, which has a delicious filling of pork meat and Parmigiano Reggiano cheese inside a thin egg pasta. Our Tortellini are rigorously hand made.

Traditionally Tortellini are eaten in beef soup, but they can be eaten with cream and also Ragù. To make a good beef soup for 4/6 persones you need: 300/400gr of muscle beef, ½ capon (or hen), one calf bone, one celery, one carrot, ½ onion, and some fresh parsley leaves. In a big pot put all the ingredients, fill with cold water and bring to boiling. While it creates foam, remove it with a holed ladle, and leave boiling for at least 3 hours at very slow fire. Before turning off the fire, add the salt, and once finished the cook, remove all the meat.

Leave the soup to stand for one hour or two and filter with a small colander. Then just bring the soup back to boiling and add the Tortellini (at least 100/120 gr per person), and enjoy!
