PARMIGIANO REGGIANO AGED OVER 40 MONTHS – A WORK OF TIME AND PATIENCE
ORIGIN
It is a DOP cheese (Denominazione d’Origine Protetta): it can only be produced in the provinces of Parma, Reggio Emilia, Modena, Bologna (left of the Reno River) and Mantova (right of the Po River). It is made from raw cow’s milk, collected exclusively in these areas, without additives or preservatives. Aging beyond 40 months is a natural extension of the process: the cheese, already marked as Parmigiano Reggiano DOP after 12 months, continues to mature under the control of the Consortium.
CHARACTERISTICS
A masterpiece of time and tradition. After over forty months of patient aging, this Parmigiano Reggiano expresses a unique aromatic complexity: hints of dried fruit and spices blend with delicate nuances of hay and nuts. The paste, in an ancient gold color and speckled with precious tyrosine crystals, is crumbly and velvety on the palate. The taste, robust yet harmonious, envelops and lingers long, turning each tasting into a memorable sensory experience.
PAIRINGS
Perfect to enjoy plain, in flakes, or paired with full-bodied wines, fine honeys, and traditional balsamic vinegar from Modena aged at least 12 years or extra old, aged at least 25 years.
