ORIGIN
The origin of Parmigiano Reggiano dates back to the Middle Ages in the lands between Parma and Reggio Emilia. Its production has remained tied to a very specific territory: the provinces of Parma, Reggio Emilia, Modena, Bologna (to the left of the Reno River), and Mantua (to the right of the Po River), an area that guarantees the ideal conditions: stable pastures for the cows' feed, a unique microclimate, and a tradition passed down from generation to generation.
CHARACTERISTICS
Parmigiano Reggiano 12 months: This is the youngest and liveliest version of the King of Cheeses, fresh and surprisingly delicate. Its texture is still soft and elastic, with a light yellow color that reflects the fresh milk from the Emilia farms. On the palate, it offers sensations of milk, butter, slightly fruity, with a natural sweetness that recalls yogurt and fresh cream. It is not yet intense or sharp: it represents the softer and more delicate side of Parmigiano.
