ORIGIN

The origin of Parmigiano Reggiano dates back to the Middle Ages in the lands between Parma and Reggio Emilia. Its production has remained tied to a very specific territory: the provinces of Parma, Reggio Emilia, Modena, Bologna (to the left of the Reno river), and Mantua (to the right of the Po river), an area that guarantees ideal conditions: permanent meadows for feeding the cows, a unique microclimate, and a tradition passed down through generations.

CHARACTERISTICS

Parmigiano Reggiano 12 months: is the youngest and most vibrant version of the King of Cheeses, fresh and surprisingly delicate. Its paste is still soft and elastic, of a light yellow color that reflects the fresh milk from the Emilian stables. In the mouth, it offers sensations of milk, butter, with slight fruity notes, and a natural sweetness that recalls yogurt and fresh cream. It is neither intense nor pungent yet: it represents the softer and more delicate side of Parmigiano.
