Parmigiano Reggiano Over 30 Months – The Taste of Time
ORIGIN
A Protected Designation of Origin (PDO) cheese, it can only be produced in the provinces of Parma, Reggio Emilia, Modena, Bologna (to the left of the Reno River) and Mantua (to the right of the Po River). It is made from raw cow’s milk collected exclusively in these areas, with no additives or preservatives. Ageing beyond 30 months is a natural extension of the process: after 12 months the cheese is already branded as Parmigiano Reggiano PDO and then continues to mature under the supervision of the Consortium.
CHARACTERISTICS
Tasty and rich in nutritional properties an authentic excellence of flavour, the result of a long ageing process that develops intense and complex aromas. Its texture is crumbly and granular, with amber nuances and natural crystals that enhance its unique consistency. On the palate it releases bold notes of dried fruit and spices, with a long, enveloping finish.
