The olive press is located in a reorganized farm, it is made of steel according to the most modern technologies, from an internationally known leader industry in the sector. The production, in loop, is ideal to pull out high quality extra virgin olive oil cold, so at a temperature which is lower than 25°C.
The full production cycle, composed by the stage of defoliation, washing, pressing and extraction by spin cycle, is performed in all its stages by the “Tenuta Pennita” specialized staff. The olive press, to guarantee the maximum quality, decide to open in the beginning of October, in order to press only the best olives at the right maturation stage. The olives comes from the olive tree variety that live since ages on these hills: the native Correggiolo, the rare and prestigious Ghiacciola, Nostrana di Brisighella, Rossina, and the Cultivar spread in the country Frantoio, Moraiolo and Leccino.
Olives are hand-collected, in small boxes (almostg20kg) ant sent to press in few hours (4-6 hours). Italian product.
