Handcrafted according to ancient peasant tradition, using the most tender and prized part of the pork leg, it is salted, massaged, and carefully tied, then left to age for months in the ancient cellars of Zibello, where time, humidity, and the Po River fog give it an unmistakable aroma and unique flavor.
CHARACTERISTICS
When cut, it reveals a soft, ruby-red slice, with a sweet, delicate flavor and a balanced hint of saltiness that enhances its smoothness. The aroma is intense, the flavor full, and the finish long, rounded, and harmonious.
