ORIGIN
Mortadella Bologna PGI is a cooked cured meat typical of Emilia-Romagna. It is a pink-colored cured meat with a firm yet velvety texture and an unmistakable, aromatic aroma. It is made from a blend of select pork meats, predominantly lean cuts and cubes of hard fat, mixed with salt, pepper, and natural flavors. The mixture is stuffed into natural or artificial casings and then slowly cooked in hot-air ovens for many hours at a controlled temperature until it achieves its typical soft, fragrant consistency.
CHARACTERISTICS
On the palate, Mortadella Bologna PGI is distinguished by a delicate, full, and slightly sweet flavor, with a balanced aroma and a creamy texture. It's ideal served thinly sliced, in sandwiches, appetizers, or as an ingredient in traditional Italian recipes. Gluten-free. Contains no dairy products. Contains no added polyphosphates.
